I laugh (and smile) about this one, because as a child, I did not really enjoy hard boiled eggs. But as an adult, I can't get enough of them. I try to always keep a container of them in my fridge, ready to eat. A few of my kids like them as well. As I type this, I'm waiting for the next batch to have cooked and cooled down so I can eat one.
For the perfect cooked hard boiled egg, lay them in a sauce pan, cover with cold water. Heat the eggs in water. Once it starts to boil, set a timer for 10 minutes. After the ten minutes, drain all the boiling water, and just use the cold water from the tap to cool them off.
Over the years of making hard boiled eggs, I've learned a little trick in peeling them. They need to be cooled, but still warm. Tap the egg all around on a hard surface (I use my sink). Then while putting the egg under running water, peel off the shell, starting with the larger end, where there is a shallow part of the egg. I've noticed that a fluid collects in side that hallow spot. When you peel there first, under running water, it sends water through the rest of the egg shell/sack and the shell just peels off!
