I am grateful for a new year, with a fresh start! The year 2011 brought a lot of experiences in my life that has made me change the way I look at life, and I have truly grown from my challenges and spiritual experiences that I have had. I'm grateful for all of my trials and happy moments! I want to be able to think of ways to be happy EVERY SINGLE DAY! Life is too short to spend it being sad or down. I'm no blogger, so I hope that my desire to do this everyday will continue. I know that if we stay positive, and look up in life, anything negative will become a positive experience! With that said..........Let's Smile!

SMILE #155 Crepe's

Tonight for our F.H.E treat it was my turn to choose!  And since it was fast Sunday for us, I knew I had a few extra calories in my daily allotment, to have a little nicer treat....or a treat at all!  So I decided I was going to make Crepes!  It's a favorite of mine from my childhood years!  I didn't have any fresh fruit to put in them, since it was a last minute decision, but I did have yummy nuetela, and coolwhip and strawberry jam!  YUM, YUM, YUMMY!!!  I'll just tell ya, it was so good, and I am smiling!!!  So good, I forgot to take a picture of them before I ate them!  :)  But this one will give you an idea!



Now, to make all of you smile!  Here is the recipe, that I use, it's the one my mom used, when I was a kid!!!

French Crepes

Mix in blender:
3 eggs
1/8 tsp. salt
1 C. milk

slowly add 1 C. flour while blender is on low.  Mix till it's a consistency of cream.
Heat your pan, (you may need to use pam or something, so it doesn't stick to your pan), pour desired amount onto hot pan, and move pan around in a circular motion, till mixture covers pan.  Flip, to cook other side!

Add desired toppings:
coolwhip
fresh fruit
chocolates
or anything else you can think of!

Makes 10 Medium Crepes
