I am grateful for a new year, with a fresh start! The year 2011 brought a lot of experiences in my life that has made me change the way I look at life, and I have truly grown from my challenges and spiritual experiences that I have had. I'm grateful for all of my trials and happy moments! I want to be able to think of ways to be happy EVERY SINGLE DAY! Life is too short to spend it being sad or down. I'm no blogger, so I hope that my desire to do this everyday will continue. I know that if we stay positive, and look up in life, anything negative will become a positive experience! With that said..........Let's Smile!

SMILE #5 Momma's Cooki'n

Mmmmmmm..... there is nothing more that makes me smile when I recreate a favorite recipe from my childhood!  I realized I had everything to make my mother's very own salsa recipe.  It may be winter time, but to bring back that bit of summertime taste into my mouth is just divine!  Those bright vibrant red's and greens, just make me want to ....well, Smile!  I'm going to share the recipe with you, but you have to understand one thing!  My mom NEVER followed a recipe!  She could make the most amazing meals, and we want the recipe, and she won't have it!  So you are going to have to go off of those wonderful 5 senses God gave you!  So this is the base of her recipe.  How much or how little is up to YOU!......


  • Canned tomatoes (diced, or petite diced-depending on what you like)
  • Cilantro (chopped)
  • Onion (diced or minced)
  • Diced canned green chilies
  • Diced canned jalapeno's (optional)....but oh so yummy! 
  • Salt to taste
  • I also like to add some fresh lime juice!


You mix all that up, and then add the additional items if so desired:
Diced avocado, corn, and/or black beans

  1. Yummy! I love salsa and guacamole! As I was reading this, I was thinking of all the recipes I love. We just fell in love with two new recipes, blueberry pancake and M&M cookie recipes. I will have to try this recipe when I am not nursing.
